You need a coating to prevent the cheese from oozing. You could use a nut crust or cracker crust but you still need something to keep the cheese in

An interesting, and challenging question. The function of the breading on the mozzarella sticks is to keep the cheese contained during cooking, and then to provide texture and some flavor to the finished product.

If I can hazard a guess as to why you'd want to make them without the breading, wheat allergy?

If so, I'd say, try a tempura style batter using rice flour. Combine 2 C rice flour with 1 C club soda, and season as desired. You'll get a different texture than a "traditional" mozzarella stick, but should be workable. You may need to play with the flour/liquid ratio to get something that's thick enough to "stick" to the cheese.

If a lack of bread crumbs is the reason behind this posting, you can make your own. To make roughly one cup of bread crumbs, you should take two slices of standard supermarket-style white bread. Remove the crusts and put them into a food processor. Process the bread on shorts bursts until you have the right size fragments. If you need to toast them, you can place them in an oven at 350 degrees for a few minutes until they are dried out and slightly browned.

well, I haven't actully tried this, but I am almost positive that it would work.
get a peice of bread, and put the cheese inside of it. then just cook it like you would cook real cheese sticks.
