i am making snickerdoodles and the recipe calls for 1 tsp of baking soda. will not using it effect the sweetness of the cookie

Baking Soda is a leavening agent. It is used to produce carbon dioxide in your baked goods, which causes them to "rise." In order for it to work, you have to bake your dough as soon as possible though. It won't work the same if you wait before baking them.

Your cookies will be flat and won't bake right if you leave out the baking soda! I wouldn't go without it... If it's because you don't have any it costs less than a dollar!

No, but not using it will give you a hard, flat, crisp cookie. You want the baking soda in it so it will rise and be tender.

No, it does not impact the flavor. Could be there for a few reasons. If you are adding an acid (lemon, vinegar or buttermilk for example), it's for getting a rise. If not, it's to even the cooking (prevent burning)
