I love brocolli. Steamed, grilled, raw.. What's your favorite way to eat it? What's your all time best brocolli recipe?

Mmmm! Broccoli and cheese casserole from Cheddars *drool* Not the healthiest way to eat it, but definitely delicious. I also eat it raw. As a matter of fact, I had some for lunch today=D

This is so good- I love broccoli- and the pine nuts are awesome!
Broccoli with Pine Nuts
3 tablespoons pine nuts
2 teaspoons extra-virgin olive oil
1 cup chopped onion (about 1 medium)
1/4 teaspoon salt, or to taste
4 cups broccoli florets
2 teaspoons balsamic vinegar
Freshly ground pepper to taste

1. Toast pine nuts in a medium dry skillet over medium-low heat, stirring constantly, until lightly browned and fragrant, 2 to 3 minutes. Transfer to a small bowl to cool.
2. Add oil to the pan and heat over medium heat. Add onion and salt; cook, stirring occasionally, adjusting heat as necessary, until soft and golden brown, 15 to 20 minutes.
3. Meanwhile, steam broccoli until just tender, 4 to 6 minutes. Transfer to a large bowl. Add the nuts, onion, vinegar and pepper; toss to coat. Serve immediately.

Broccoli Salad

6 cups broccoli, raw, cut into bite size pieces
1/2 red onion, sliced
1 cup raisins
12 strips bacon, cooked and crumbled
1 cup mayo
1/3 cup sugar
2 tablespoons vinegar

Mix mayo, sugar and vinegar in a small bowl. Combine broccoli, onion, raisins and bacon. Pour sauce over and marinate in refrigerator for several hours.

Steamed with nothing on it. No salt no butter. But I'm weird like that. I also love my corn without salt or butter. I do love to make a garlic broccoli pasta with chicken. But that is not really anything new that people haven't seen or done before.

Lynn's Broccoli Rice Casserole

½ cup chopped onion
½ cup chopped celery (*I will often leave out if I have none)
4 T. margarine
2 cups cooked rice
1 (10½ oz) can cream of mushroom soup
2 (10-oz) pkg. frozen chopped broccoli, barely cooked and drained
1 (8 oz) jar Cheese Whiz (*I will often use a chub of Kraft Garlic Cheese or Tostitoes Nacho Cheese, whatever I have around)
1 4-oz) can water chestnuts, diced

Saute’ onions and celery in margarine. Mix all ingredients. Put into a greased 2-qt. baking dish. Bake at 350ºF for 25 minutes or until bubbly. Serves 8. Enjoy!!

Broccoli Cheese Soup

1 cup fresh or frozen broccoli, chopped small
¼ cup onion, finely chopped
3 tablespoons butter
Kosher salt and fresh black pepper
3 tablespoons flour
2 cups chicken stock
½ cup heavy cream
½ cup shredded Velveeta
½ cup shredded cheddar cheese

In a heavy saucepan sauté onion in butter until tender. Whisk in flour, salt and pepper until smooth and simmer for one minute. Gradually stir in broth until mixture boils and thickens. Stir in cream, broccoli and cheese and simmer to desired thickness.

Broccoli And Three-cheese Casserole Recipe

2 cups cooked white rice
6 tablespoons (1 1/2 ounces) freshly grated Parmesan cheese, divided
3/4 teaspoon salt, divided
1/2 teaspoon dried fines herbes
3 egg whites
Cooking spray
1/2 cup (2 ounces) shredded fontina cheese
4 cups coarsely chopped broccoli florets (about 1 bunch)
1 cup finely chopped onion
1/4 cup (1 ounce) reduced-fat shredded extrasharp cheddar cheese
3/4 cup egg substitute
3/4 cup 1% low-fat milk
1/4 teaspoon black pepper
2 (1-ounce) slices firm white bread

Directions
Preheat oven to 400°.
Combine the rice, 1/4 cup Parmesan cheese, 1/4 teaspoon salt, fines herbes, and egg whites. Press mixture into an 11 x 7-inch baking dish coated with cooking spray. Sprinkle fontina evenly over rice mixture. Set aside.
Cook broccoli in boiling water for 4 minutes or until tender; drain well.
Heat a large nonstick skillet over medium heat. Coat pan with cooking spray. Add onion; cook 4 minutes or until tender, stirring occasionally. Stir in broccoli. Spoon broccoli mixture evenly over rice mixture. Top with shredded cheddar cheese.
Combine egg substitute, milk, remaining 1/2 teaspoon salt, and pepper in a small bowl; stir well with a whisk. Pour egg mixture over broccoli mixture.
Place bread in a food processor; pulse 10 times or until coarse crumbs measure 1 1/4 cups. Combine breadcrumbs and the remaining 2 tablespoons Parmesan cheese. Sprinkle breadcrumb mixture evenly over broccoli. Bake at 400° for 23 minutes or until set.

One of my favorite veggies. The way I like it best is steamed with cauliflower, a shot of sea salt, ground pepper and touch of butter tossed and served just like that. 10 minutes or less from fridge to plate.

Simply steamed is my favorite... usually stir-fried with some beef or chicken and served on a bed of white rice.

Raw and sometimes with a little Ranch or if you boil them then I like to drink the water afterwards. My Grandma who grew in the the depression taught me that.

I like it any old which way!!! It is my fave stir fry veg. and my favorite veg for dipping. I suppose mainly I eat it just as a simple steamed side dish.
