Ohhhh.....pot roast....love it.

Try this:

dice 1 large spanish onion
Mince 3 gloves of garlic
slice 6 carrots into 1/4' pieces
slice 4 celery pieces
1- bay leaf
4 sprigs of thyme
4-6 cups of stock (buy stock not bouillon cubes or broth
your roast of course
Salt and pepper ( use Kosher and fresh ground if possible)
About 1 handful of parsley- finely chopped

Season the roast with the salt and pepper- don't be shy - then rollit in some flour

in a heavy bottom pot-preferable one that can go in the oven,
sear the roast on all sides-probably 2-3 minutes per side (roll the roast so you get as much seasoned as possible)

remove the roast, reduce the heat to medium and add 3TBLS of oil then add the onions, carrots, celery and bay leaf. season with some salt and pepper. Let this cook 5-7 minutes or until the veggies are soft. Add the garlic and thyme. cook for two more minutes and add the roast back into the pot then cover with the stock_just barely cover.
Bring the stock to a simmer, cover the pot and put in the oven for 3-4 hours or until the roast is ready to fall apart. Add the parsley.

If you want to thicken the sauce., remove the roast to a serving platter and cover....mix a couple of teaspoons of flour with some water. Add a 1/4 cup of sauce into this mixture....then add that back to the sauce...bring to a boil on the stove(needs to boil) to remove any starchness and bring it to its full thickening power.

Serve with a good crusty bread

I just made one yesterday.
Salt and pepper both sides.
Sear in 3 Tblsp hot oil in large pot on both sides
Add
1/2 pot brewed coffee
1/2 pot water
1 envelope onion soup mix
Bring to boil
lower to medium
cover and cook 2-21/2 hrs

If you want gravy
Remove roast to plate
Bring broth to a boil
mix 2Tblsp corn starch
and 2 Tblsp flour
1/2 cup water
I usually shake this mixture up well
in a glass jar
wisk this in to the boiling mixture
and let boil strirring frequently for 2 minutes

The gravy is awesome, and you don't taste the coffee, it just brings out the beefy flavor
I usually put my roast back in the gravy and serve w/ mashed potatoes and a couple of vegetables.

I do it in the crock pot. I just add lots of sliced onion and some beef in a mug dissolved in 1 cup of water. When it is done I take out the roast and onion and in a saucepan make gravy with the juice and add the onion back in.

I like to cook a roast in the crock pot. I use Lipton dry soup mix for the seasoning.....when you come home dinner is ready! The roast will be very tender. I cook on low all day.

I throw mine in a crockpot for 4-6 hours on high with baby carrots, potatoes and an onion that has been quartered, along with two springs each of fresh thyme, rosemary and bay leaves. Yummy!!

sirloin roast. salt and pepper, cover tightly, cook on low temp 225 or so for several hrs.
