I guess you would call this a colage. Would I use Matte Medium or something else.

If the rest of the painting is acrylic, you can use matte or gloss medium. If it's a watercolor on paper, you can use either matte medium or Elmer's Glue-All.

Many years ago, I did some of this type of work. I used to use Elmers glue on my work. You have to use a very minimum of glue however and be very cautious with your placement of the leaves. Sometimes I would go over my entire piece with a gloss media and this seemed to help secure the objects to the canvas board. I would definitely make the gluing of the leaves on the work one of the last things that I did before completion....Good Luck and Happy gluing....~

Actually wood glue is the best option.
Just be sure to glue it to a dry piece of canvas. If you use acrylics the leaves should stick to the paint as well. If they come loose when the paint has dried just glue them back with wood glue.
