I am looking for a Gingerbread Cookie recipe that uses something healthier than molasses without sacrificing flavour....perhaps something with honey?

What's wrong with molasses? You won't get the same flavor with honey or corn syrup. And as far as I know, the health affects are pretty similar - it's all sugar.
