1 was an ancient account of creation, it is thought that later the priests thought it didn't reflect the glory of God well enough and re wrote it. But how both accounts got into the bible I don't know. Well spotted though a lot never notice it, I think it goes a long way in weeding out the interpretations of man, even the flood has this priestly change happening in the clean and unclean animals. I'm Catholic and have been told of these things that's why we don't follow the literal interpretation.

It is an indication that the redactors of the book had more than one source. The plural elohim could not be edited because of age-old traditions which may have roots in the Sumerian and Akkadian ilu, the pagan extraterrestrial gods. Chapter 2 may have been an insertion to insist the singular God of monotheism.

There were two different accounts in circulation at the time Genesis was written, and both were included to have the greatest appeal. It's that simple.
