Oh Judy, this is one of my favourite American foods! I have made it with 3 sorts of beans: red, kidney and black. I like it with tomatoes and meat, such as ground beef or pork! Add all of the spices, which I buy in a packet at the shop. Brilliant!

I'm no good at following recipes. My chili comes out different every time. But I do have two "secret" ingredients I like to use.
1. Beer, preferably a stout such as Guiness. Use about a pint for a large batch. It's best if the beer is room temperature but it doesn't need to be flat.
2. Baking cocoa. I use about 3/4 to 1 cup for a large batch.

Chili crabs-40 min 20 min preparation
Ingredients
1 lb crabs
8 fresh red chilies
7 garlic cloves
3 tablespoons cooking oil
cilantro, for garnishing
3 tablespoons tomato ketchup
1 tablespoon sugar, to taste
salt, according to taste
1 tablespoon soybean paste
1 cup water
1 tablespoon cornflour
1 teaspoon lime juice
Pound garlic & chili.
Heat the oil in a wok,fry the garlic & chili till fragrant.
Add in crab & stir-fry for a minute or two.
Mix the tomato ketchup,salt,sugar,soya bean paste,water & corn flour to make the sauce.
Add the sauce mixture to the crabs & stir well for two minutes.
Cover the wok & simmer over high heat for five to seven minutes till the crab shell turns bright red.
Remove cover & add in the lime juice.
Garnish with cilantro leaves.

I take one pound of lean ground beef and one medium onion, chopped, put in pot and cover with cold water. Slowly bring to boil while stirring occasionally. When browned thoroughly, drain and add one 16 oz. can kidney beans, one 16 oz. can crushed tomatoes, 1 TBSP chili powder. Continue simmering until onion is thoroughly cooked. Add more tomatoes and more chili powder if desired, or according to taste and texture. It is simple and lower in fat, because you drain excess fat.
