whenever I fry onions, they always turn out crunchy!!! At first I thought it was because I wasn't cooking them for long enough, but even if I burn them, they are still crunchy! Is this to do with the temperature/amount of oil?

Any tips?

You want to do what is called sweating a vegetable
med low temp-
long cooking times
no browning
onions will be limp and translucent
when finished onions will taste sweet -starch to sugar conversion
make sure that you are using pan w/ o a paper thin bottom
El cheapo pans are notorious for developing hot spots

Low temperature with a longer time, 5-10mins on low power, pick the time (must be on low) untill the white onion turns oily and sort of gray/see through. Be sure to use oil to keep the onion moist.

Maybe add a little more oil and cook them over a lower heat. It may take a bit longer but it will be worth it!

Sounds to me as if you are cooking them on too high a heat. Fry them slowly and gently on a low to medium heat and they should turn out lovely and soft.

cook them on a really low heat for a long time with a bit of oil if they start to burn then put a tiny bit of butter. just cook them long and slow!!1

low to medium heat for about 15 minutes with a lid will help soften them. remove the lid for last 5 mins to allow excess water to evaporate.

wrong oil? too little oil?

too big a chunky cut...

i regularly do 4 onion curry, and i fry them at full heat,, and stir regularly... they go transparent and then they go soft... (then the mrs usually nicks a fried onion butty) and i add half a bulb of garlic... mmm

boil in a little water first and then fry on a low heat until light brown

Soften them first for about 1 minute in the microwave.
