Pistachio Salad Dessert

Ingredients:

1 small box Jell-0 Instant Pudding, Pistachio Flavored
1 regular sized can of crushed pineapple, do not drain
1 c. mini-marshmallows
1 c. chopped nuts
1 small container of Cool Whip
2 cups Chopped fresh yellow delicious apples
1 cup halved maraschino cherries

Green food coloring

Directions:

* Put undrained can of crushed pineapple into a large bowl, add dry pudding mix and combine well.

* Add marshmallows, apples, cherries and nuts.

* Fold in Cool Whip.

* Chill in fridge for several hours or overnight.

Pistachio Jello Salad

1 package (4-serving size) instant pistachio pudding
1 can (20 oz. size) crushed pineapple with juice
1 cup mini marshmallows
1/2 cup chopped nuts (opt)
1 3/4 cup thawed cool whip

Directions:

Mix first 4 ingredients well together. Fold in cool whip. Chill at least 2 hours.

1 large package of jello pistachio pudding
1 large can 20 OZ crushed pineapple in juice undrained/ or 1 large 20 OZ pineapple tidbits retaining 1/2 cup juice my personal preference.
1 large can mandarin oranges drained.
1/2 cup maraschino cherries halved
1 Regular size container cool whip ( prefer extra creamy) at room temperature
1 regular (pint) of cottage cheese I choose 1% and it taste fine.
1/2 cup coconut flakes
1/2 cup chopped pecans

Incorporate the pudding into the cool whip by thirds adding the all of the cottage cheese at the beginning. blend gently until color is uniform (No bright green patches of dried pudding mix). Gently fold in the fruit and juice you reserved until well mixed. Add remaining ingredients and place into desired container and chill in refrigerator for at least 1 hour before serving.

I make mine with strawberry banana jello mix cool whip cottage cheese pineapple chunks and marchino cherries. you can use any canned fruit you like just make sure its chilled and well drained.

I usually do that w/ green jello, not pudding.


Seafoam Salad

1 large can pear pieces, drain juice and save
2 (3 oz.) pkg. lime jello
1 8oz. cream cheese
4 T. milk
1 (9 oz.) carton Cool-Whip (or less)

Drain pears. Heat juice to boiling & pour over jello to dissolve. Cool until partially set. Combine cheese and milk. Beat til smooth. Stir in jello. Fold in pears and cool whip. Pour into 9x13, chill til set.

Green Goddess Gelatin Salad

1 (28 oz.) can crushed pineapple, drained, reserve juice
1 (8 oz.) pkg. cream cheese, softened
2 envelopes lime Jello
1 pint heavy whipping cream
2 tbs. cider vinegar


Place pineapple in large bowl; set aside. In meduim bowl, add Jello powder, 2 cups boiling water and stir until dissolved. Add 1 cup cold water and 1 cup reserved pineapple juice. Add vinegar. Let pre-set in freezer for a few minutes. With electric mixer, combine cream cheese and crushed pineapple. Add Jello mixture; mix until smooth. In separate bowl, whip the cream until it holds soft peaks. Gently fold whipped cream into Jello mixture. Transfer to a pretty bowl and refrigerate at least 4 hours or until set, preferably overnight.

dice some celery to put into it. You can use orange jello as well or any other flavor. When I use the orange flavor I put the jello powder, cottage cheese, and pecan pieces in it.
