Ok, for work, we've decided to do a Thanksgiving dinner, because we have some guys here from Spain that don't normally get to celebrate most of our US holidays. I have to be at work at 9:30 AM and of course I offered to make homemade mashed potatoes. I really don't want to get up any earlier than I have to so I was wondering if it would affect the potatoes badly or make it taste different if I were to just peel and cut the potatoes the night before I have to boil them? Any suggestions?

If you peel the potatoes to early they will discolor and turn brown. I learned a great trick from my grandmother. If you want to peel the potatoes ahead of time, just add an "aspirin" (ASA) into the water The potatoes will NOT absorb the aspirin and they will not discolor. So even if someone had allergies to ASA (like myself) you wont have any worries. When your ready to cook them, just drain the water and fill it with fresh. Works everytime.

I'm not sure what would happen if you left them raw overnight. If you keep them in a sealed container, I don't see why it would be a problem. Another suggestion, boil the potatoes the night before. That way all you have to do in the morning is add the rest of the ingredients and mash them. This is what they did at at local family restaurant I worked in as a teen. Hope they turn out great!

Just set them in a bowl of water covering the potatoes to keep them from browning and put them in the fridge. They'll be fine.

Make a mashed potato cassarole the night before and just reheat it the next day.

Peel and cut. Keep in water in the fridge and your're fine to cook the next day.

Put them in nice cold water, submerged. Throw some ice in to keep it cold.

Soak them in water.

Also use off the shelf can milk and cream cheese.
They will be unforgettable.

keep them in cold water overnight and they will not be brown the next day...........keep them in the frige overnight then cook in the morning.........
