well you have even them out dont eat them all at once,eat 3 small meals a day,your doing right by staying under 20 grams of fat,watch the labels as when they reduce the fat they add something else like more sugar also watch the salt content no more than 5-6 grams a day,you say you gain more weight when you eat more fat even though under 20 a day,it deppends on what fat your having,it is the saturated fat you have to cut out try and cut as much of that as you can,check the labels look at what fat it contains the saturated fat wants too be very low,if it says 0.something or 3 grams that is ok if it goes to 6 upwards dont have it polyunsaturated is ok,use olive oil to cook with,the range of calries for a female is 2000 if on a diet between 1200-1500,a man needs 2500 cals

Every body is different, so different people react differently to foods. For one, how much exercise do you do a day? It is really important to do at least 30 minutes of exercise per day (even if you just walk fast for 30 minutes).
Also, you may want to look up the blood-type based diets. I have a friend who was a vegetarian and was quite overweight. She said nothing she did worked, she couldn't get rid of the weight. Then she looked into the blood-type diet, and noticed since she was type 0, she needed meat. Within a few months of changing her diet, she got better.
And lastly...what kinds of fats are you eating? You should totally stay away from polyunsaturated fats (most seed oils) and trans fats (in margerine). Get the right combination of monounsaturated fats (olive oil) and saturated fats (butter or ghee). The body needs these fats, because they perform important functions in the body. Also look at how much carbs you are eating, because even complex carbohydrates are nothing but sugars, because that's what they end up being broken down to in the body.
My mother lost 25 pounds fairly quickly by changing her diet to mainly fruits and vegetables and greatly reducing carbohydrates. She watches her fats, and only eats healthy ones, and it worked great for her. Whenever she gets hungry, she just cuts up some fruit, or eats some lightly steamed veggies...
An interesting topic to look into may also be the paleolithic diet...google it. We talked about it in my clinical nutrition class, and our teacher thinks that this is the healthiest and best approach to diet.
