can i just use normal flour? i dont have cornflour.

I'm a student i'm hopeless at these things :)

You could do with some chicken stock as well, but just dissolve the cube in boiling water - mix some cornflour with a little cold water and gently add hot mix stirring all the time on a gentle heat.

Don't worry, cornflour is horrible and makes a scummy mess, be sure to use normal flour!

If you are cooking chicken in the oven, pour off the fats and juices that run out of it when it is cooked into a small saucepan... heat this up, and add enough flour to this to thicken it slightly. It's important to add the flour to fat and not to water, so don't put your stock in yet. Mix the flour in well. It shouldn't be too thick or it will taste floury.

I don't know if you realise but Oxo cubes are a fast way to make stock. (I hope you know what stock is.) Now, I think Oxo cubes use 190ml water, but I always find that makes the stock way, way too strong. Anyway, boil some water in your kettle, throw one cube in a jug and pour like at least 300ml water over it, because following the instructions on an Oxo packet makes for horribly strong stuff. Stir it (a fork is best) until the cube has dissolved. This is your stock.

Pour this slowly into the chicken fat/flour mixture, stirring all the time, until you have as much gravy as you need or until it starts to get too thin.


And I am a student and I'm a damn good cook! The first year of your degree counts for nothing so use the time to teach yourself to cook... I did, and I lost over 6 stone!

Yes you can use flour...the trick with flour is to add it in the beginning so that it has time to cook...flour needs to cook down in gravy's so that you cannot taste the flour...

My chicken in a gravy

When you make a gravy this always works:
sprinkle your pot with a LITTLE sugar and let it melt then it will immediately start to turn brown when that happens throw your chicken in (this helps to brown your chicken and get your gravy started) then add chopped onions and bell peppers and garlic and your favorite seasonings.... now you can probably start slowly adding water (or chicken broth) once your chicken is almost covered in liquid and it's boiling add about a table spoon of flour to a LITTLE bit of water and mix it with a spoon...then add it to your gravy...let this all cook to perfection in about 45 mins to an hour on med to low heat stirring occasionally.

Put your chicken oxo cube into a jug pour in about half a pint hot water.
Put some ordinary flour about a tablespoon full and mix to paste add a few mixed herbs slowly pour in oxo mix.
Put into a saucepan and bring to a simmer.
It will gradually thicken.
Good luck....................you could also grate an onion into it

I have an old fashioned way of doing it that we have been making in our family for years. I don't like using cornstarch, I use all-purpose flour, which gives gravy a much more richer flavor. Once you have your broth made, heat up your sauce pan and put a few tablespoons of butter or margarine in the pot. Once the butter has melted sprinkle small amounts of flour. Begin vigorously mixing with a wooded spoon until the mixture becomes a stiff ball. Now begin adding your broth little by little. (it is crucial that you add the broth little by little to avoid lumps) Mix until ball starts to form a paste. Once you have finally added all of your broth begin mixing very fast with a wooden spoon or a whisk until it comes to boil. Lower the heat and mix. Add your salt and pepper and voila! Old fashioned gravy! This is also the way you make a basic roux for Alfredo sauces and such.

Make a rue (sp?) with a little flour and butter in the pan. Saute your garlic & onion. Then add a little evaportated milk or cream, on low heat. Add the cube or cubes. Stir until mixed and remove from heat, continue stirring until it thickens.

PS - It's better with pan drippings.

dissolve the oxo cube in half-pint of boiling water,
add 2/3 table-spoons of corn-flour, to thicken & stir.
add more water to get the consistency you want.
