Don't forget the sweet potatoes. You can either make them as a casserole with the pecan topping* or baked with the marshmallows on top. Either way, they go well with turkey and ham.
You can also do succotash... which is lima beans, corn, a little butter, salt, pepper, thyme, green onions all sauteed in a pan... really easy and delicious!
Green bean casserole is always another holiday favorite or you can just saute some fresh green beans in a little bit of butter and garlic.
*3 cups mashed sweet potatoes
1 cup brown sugar
2 eggs, lightly beaten
1 teaspoon vanilla
1/2 cup milk
1/2 cup melted butter
.
Topping:
1/2 cup brown sugar
1/3 cup flour
1/3 cup melted butter
1 cup chopped pecans
PREPARATION:
Combine first 6 ingredients. Pour into a buttered 1 1/2 to 2-quart casserole dish. Mix remaining ingredients together and sprinkle over top. Bake at 350° for 30 to 40 minutes, until hot and browned.
Serves 6 to 8.

this is great on all the above
sausage gravy
INGREDIENTS
1 pound pork sausage
1 onion, finely chopped
1 green bell pepper, finely chopped
1 teaspoon crushed red pepper flakes
2 tablespoons garlic, minced
4 tablespoons unsalted butter
salt and pepper to taste
4 tablespoons all-purpose flour
1 teaspoon minced fresh sage
1 teaspoon minced fresh thyme
2 cups milk, divided
2 cubes chicken bouillon
1/4 cup minced fresh parsley
DIRECTIONS
In a skillet on medium heat cook pork, onion, green pepper, red pepper flakes, and garlic until pork is crumbly. Drain off excess fat, but leave a small amount.
Combine butter, salt, and pepper with the meat mixture and stir until butter melts. Slowly sift flour over the top. Mix gently and allow mixture to cook for 5 minutes. It will burn, so do not let it sit unguarded. Don't forget to scrape the bottom of the pan. Add the sage and thyme.
Slowly stir in milk, about a half a cup at a time, and incorporate it well. When the mixture thickens, add more milk. Do not let it boil vigorously, or it will burn. Add chicken bullion and let cook for five minutes. Again, if it thickens too much, add more milk. Adjust taste with more salt and pepper if needed.
Just before serving, add the parsley, and about a 1/4 cup more milk; the gravy will thicken quickly as it cools.

I always liked butternut squash with a bit of maple syrup and some butter in it. I served it this year for our Thanksgiving (Canadian) and everyone really, really liked it. If you don't have maple syrup, you can also use brown sugar.
You'll probably want 1 average sized squash per 2 people! You just have to cut it in half, de-seed it, place it face down on a casserole dish in some water, cover with saran wrap and microwave it for about 10 minutes. Make sure it's very soft and scoop it out of the rind, mash it with the syrup and butter.. so simple! And the nice thing is that you can do this way before the meal and just heat it up before putting it on the table.
Cheers

I'll give you our favorite recipe for gravy. It really does go on everything. Once people try it, they'll want more.
Bacon gravy
2 Tbsp bacon grease (I keep mine in a tub in the fridge)
2-4 Tbsp of flour (depending on what consistency you want)
2 cups beef broth (I use the jarred paste to make it a little stronger)
Make as you would any other gravy. And just double or triple the recipe as needed. Nobody will ever want boring brown gravy again!

TURKEY GRAVY
3/4 c. canned chicken broth
5 tbsp. all-purpose flour
Salt and pepper to taste
While turkey is roasting, simmer giblets, neck, whole onion and a celery stalk in 2 cups of water in a small pot. Season with same spices used on the turkey. Shred the giblets and neck meat to add to the gravy. (You can substitute the broth for canned broth).
Strain pan juices.
Degrease juice, save 5 tablespoons of fat. Pour juices into a measuring cup, add enough broth or canned broth to measure 3 3/4 cups.
Heat 5 tablespoons of turkey fat in large saucepan over medium heat. Add flour, cook until it begins to color stirring constantly, approximately 4 minutes. Add pan juices and broth, simmer, whisking constantly.
Cook about 10 minutes. Simmer to heat through, then serve.
