actually b/c a lot of the starch comes out into the water. if you notice that there is a white residue in the pot after you drain it it is actually starch...which has carbs!

Because when they are cooked, they take on water. So all of a sudden, a half cup of raw grains is not a half cup anymore when swollen up with water. It's just a concentration thing, that's all.

If you measure the dry grains, cook, then eat them all, the carb content has not changed, even though the volume you are eating has.

Cooking enhances the starch and therefore the carb. content.
