I need a good cornbread oyster dressing recipe. I can make good cornbread dressing but I want to do something different this year. I am going to make a small pan since everyone might not like oyster dressing. Please share your favorite recipe and not something that you found on a cooking site. I want a true tested recipe. Thank you .

I also need to know if the oysters have to be pre-cooked or not before adding it to my dressing.

Depends on how much you are making. We always use cornbread & a bag of dry bread cubes, onion, celery, 1 or 2 raw eggs, a stick of melted butter/margarine, chicken broth & oyster liquid, plenty of oysters cut in half or so. I live in Louisiana & was once told that a real oyster dressing doesn't have cornbread in it so this year I'm going to try one with a loaf of stale French bread that you break up & soak in the oyster liquid & then squeeze out. There is also a bunch of green onions, a medium onion, garlic, parsley, sprig of thyme, 2 eggs, butter or margarine & salt & pepper. I like mine pretty moist.

Hey Ya'll, I just add the oysters to my regular dressing recipe also like Miss Georgia Peaches. For the small pan just add the oyster instead of the chicken or turkey. Sometimes I use other seafood like shrimp or crawfish.

OLD FASHION CORNBREAD DRESSING 1 c. white self-rising corn meal 3 eggs 3/4 c. buttermilk FOR DRESSING: 1 doz. saltine crackers 4 slices white bread 1/2 c. chopped onions 1/2 c. chopped celery 3 hard boiled eggs 1 tsp. sage (or to taste) Salt and pepper to taste Broth from chicken or canned Eggbread: Combine 1 cup cornmeal, 3 eggs, 3/4 cup buttermilk. Bake at 350 degrees until brown. Dressing: Combine eggbread with all other ingredients. Mash with potato masher. Add enough broth (while mashing) to make dressing the wanted consistency (like mush). Bake at 400 degrees until brown (about 30 minutes). May be made ahead of time and refrigerated.

Just add the oysters to your cornbread dressing. I usually add them half way through baking my dressing.
