I would go with granny smith apples. It is the #1 apple for baking. It holds its shape well and has a great flavor.

I use a combination of granny smith and macintosh. The Granny holds its form and give a robust taste the Mac breaks down and thickens the juices and adds a little more sweetness. Also I precook the apples then place them in the pie shell - this method allows for a higher pie and the apples wont collapse leaving a hollow dome between the top crust and filling.

I use a tangy apple like granny smith and a sweeter kind like Golden delicious. It really depends what is in the store. I don't like it when they are too starchy. Often the stores give you a little description of the apple. Read it and try out the ones which sound good to you. You can also ask someone in the produce department and get a recommendation. I love mixing the different kind of apples to get more dimension in the flavor. I also don't have to use as much sugar as the sweet apple will ad to the sweetness.

Macintosh is more of an eating apple. Try Granny Smith, Cortland,Macoun, Gala or Fugi. Good luck with your pie and Happy Thanksgiving

I use Golden Delicious or Jonathan apples around the holidays, when used for baking. Both of these apples are sweet and tart and also hold their shape in baked goods.
Happy Holidays!!!

I always use Granny smith, but a woman told me the best pies are made from all different kinds. The only thing that matters is that they are firm and keep their shape and a bit tart.

I like Macs or Cortlands but just about all the cooking shows use Granny Smiths for pies.
