If Mary was to play such a role, why would the writers to the epistles completely leave that out?

Mary plays no such role in Scripture. That has simply become a part of Catholic tradition based on the twisting of a few passages in the Gospels. Paul and Peter guided by the Holy Spirit didnt get it wrong, Catholics got it wrong being guided by their traditions and foolish philosophies which advocate blasphemy.

Jesus never said that Mary was the true bread from Heaven, the gate, or the true path to the Father. He said those things about himself.

For this reason Christ is the mediator of a new covenant, that those who are called may receive the promised eternal inheritance—now that he has died as a ransom to set them free from the sins committed under the first covenant. -Hebrews 9:15

It is written at 1 Timothy 2:5, 6
"For there is one God, and one mediator between God and men, a man, Christ Jesus, 6 who gave himself a corresponding ransom for all..."

Mary was not even important in religion till the Nicea Conference made her so----trying to woo goddess worshipers from their religions (such as the Greeks and the Romans). The concept of Jesus was also made up from there------that there is a trinity and that he is G-d. The trinity had never been mentioned before.

So, I would say that neither is.

Jesus is the only Mediator.

Mary can't hear anyone "praying" to her, and the Bible confirms that Jesus is Mediator.

Mary - intercessor, one who speaks or pray for us to God
Jesus - Meidator, the one who brings us to the Father.
