I am having a large New year's party and plan on making 4 trays of it. Can I assemble it the day before? Do I freeze it or put in fridge before I put in oven?

Everyone has given great advice...yes you can cook your lasagna and freeze it... I have always had the best results though preparing and cooking it 3-4 days in advance and leaving in fridge till time to reheat and serve. This allows the lasagna noodles to soak up the flavor of your sauce,cheese, and meats if you have any. The longer it is allowed to sit after cooking, the more flavorfull it gets. Also allows everything to settle making it easier to cut when time comes. Good luck, and have a great new years..

Because it has eggs, you have to be careful refrigerating it for too long. If it's uncooked, I wouldn't store beyond about an hour after assembling it. So..... you can make it ahead and freeze it, then cook from a frozen state (add some time to your cooking time) or you can make it, bake it and then freeze it so you only have to warm it up. Lasagna is very sturdy so you won't have any problem with flavor changes due to freezing. Happy New Year!

You can make the lasagna well in advance. Cook it partially when you make it and freeze it. Then when you bake it to heat it from it's frozen state, it finishes the cooking process and warms it up at the same time. That's how they do those that you purchase in the freezer section. Pigs in a blanket should not be frozen. You can freeze the quiche but freeze it raw and put it straight into the oven to cook from it's frozen state. You can make the quiche the day before and refrigerate it. Then it will be fine for the christening. But the pigs in a blanket need to be made on-the-spot. Hope that helps.

I have also served lasagna for a party. I made it 5 days in advance and froze it. Then 24 hours before cooking, I took it out of the freezer and refrigerated it. You couldn't tell that it had been made in advance, it was good.

You can assemble lasagna 24 hours in advance,just cover it and put it in the refrigerate

Yes, you can cook it the day before. Actually, you can cook it now, freeze it, take it out the day before, and reheat if you like. That will give you more time on the day of the party to do other things. Just don't refreeze it after it has already been frozen.

Refrigerate the day before. I have unthawed forgotton trays of lasagna that was two years old or older and it was just fine.

absolutely !

and you should do 4 trays in advance . only leave salad for same day assembly.

assembly / dessert or order some tray of a mini pastry to be picked up / outsource to bakery. your dressing can be prepared in advance. mini italian caneloi of course perfect.

You can make it easily one day ahead! But refrigerate it and cover with Plastic wrap !
