I Have to work Wed before Thanksgiving so I need to do what I can if possible before Wed. like the potatoes.

You better cook em if you are gonna peel them early-otherwise thats a no-go! Potatoes will turn brown when they hit the air-just like apples..gross!

Yeppers, putting potatoes stright into water as they are peeled and/or cut is almost always a great idea. I usually put a drop of lemon juice in the water, especially if they are going to sit more than a few hours.

Better still, if these are going to be mashed or cooked potatoes, I make the whole thing ahead of time. Mashed potatoes, kept covered in the fridge, will keep several days. So will roasted potatoes. French fries do not keep well.

I'm assuming since you want to peel and cut them, you're making mashed potatoes. If I were you, I'd go ahead and do it all ahead of time, then pop them in the microwave Thursday (or the oven, if you're using a roaster or something like that for the turkey). It really won't make much of a difference to the taste, and it'll be less hassle on you.
Also, if I may suggest, don't necessarily try to do everything yourself. You can ask your family to help - someone bring the potatoes, another the corn, someone else the pumpkin pie, etc. My grandma has always done everything herself and ends up sooo stressed...this year we finally convinced her to let us help, and she's already less stressed. :)

I always peel my potatos and squash up to two days ahead. Make sure to cover completely with water. Change water daily and they will do fine.Happy Thanksgiving.

I was told that once peeled you can store potatoes in water in a tupperware for a few days. If you take the lid off though you need to change the water.

You could par boil them and leave them in the refrigerator ready for when you get home then roast them after sprinkling them with a little flour. But the other answerer's are right in that you might as well go ahead and cook the whole meal and reheat again in microwave thoroughly when the time comes.

Hi Mary you can peel your potatoes ahead as long as you keep them completely covered in cold water, you can do this about 1-2 days ahead just as long as you keep the water fresh; also you can peel your carrots, squash,etc.(that's if you are having these veggies) ahead also as long as you keep them in cold fresh water.Also I don't know if you have a crock pot; once your potatoes are cooked you can keep them hot in the crock pot(on a low temp),I use them all the time to keep my potatoes,veggies,gravy,etc.Happy Thanks-Giving to you and your family...

yes. store them in the refridgerator after peeling and cutting. they should be in a container of water to prevent them from drying out.

Monday/Tuesday would be fine. Just be sure to change the water everyday and keep them as cool as possible, (no need to refrigerate).
