Syrup is probably okay because of the high sugar content. Pasta sauce is generally a lot more perishable, so I wouldn't try it.

Depends on the "thing" and how long it was out. Syrup is good for quite a long time. Check its expiration date. Pasta sauce... not so much. It might be fine a couple of hours, but that is about it. Different things are good for different periods of time. When in doubt, don't eat it! You could get sick.

Check the labels, most will specify "refrigerate after opening". I know people keep strange things in their cupboards that I would never consider leaving outside of my fridge, like mustard, pickles, ketchup, and pancake syrup.
But I know from personal experience (left it out one night!) that pasta sauce will actually mold when you don't refrigerate it after opening.
