Hot Mulled Ginger-Spiced Cider
--Cooking Light, Dec. 2005

This recipe is prepared in an electric slow coker, freezing up the stovetop. However, it can be heated in a pot on the stove, if you prefer.

3 whole cloves
2 (1” x 4”) strips orange rind
2 whole allspice
1 (3”) cinnamon stick
1 (½”) piece peeled fresh ginger
12 cups apple cider
1/2 cup apple jelly
1/4 teaspoon ground nutmeg

1. Place the first 5 ingredients on a 5-inch-square double layer of cheesecloth. Gather edges of cheesecloth together, tie securely.

2. Place cheesecloth bag, cider, jelly and nutmeg in an electric slow cooker. Cover and cook on HIGH for four hours. Remove and discard cheesecloth bag.

Yield: 12 servings. (1 cup).

Calories 174; Fat 0g; Protein 1g; Carb 43.8g; Fiber, Chol, Iron, Sodium, Calc, all 0g.

Sicilian Splash like The Olive Garden®
Serves: 1

4 ice cubes
3 oz. white grape juice
1½ oz. orange Torani® syrup (or Triple Sec, Grand Marnier, or Cointreau)
1½ oz. club soda
1 lemon slice, for garnish

Combine all ingredients in a tall fluted glass and garnish with lemon slice on rim.

Cherry Cheesecake Martini

1½ oz. Dr. McGuillicuddy’s Vanilla Liqueur
¾ oz. Vodka
Splash Cranberry Juice

Combine in an ice filled shaker; shake and strain into a chilled cocktail glass. Garnish with a maraschino cherry.

Bisschopswijn---Very Good, my grandma makes this

INGREDIENTS
1 (750 milliliter) bottle red wine
1/2 cup white sugar
2 teaspoon ground cinnamon
1 orange
12 whole cloves



DIRECTIONS
In a large saucepan on medium-low heat, combine wine. sugar and cinnamon. Cut the orange in half, push the cloves into the outside of the orange halves, and place them into the wine.
Heat SLOWLY on LOW heat for about 30 minutes or until steaming. Do not let it boil. Heat your glasses in warm water before serving.



Cider Wassail

INGREDIENTS
2 quarts apple cider
1 1/2 cups orange juice
3/4 cup pineapple juice
1 tablespoon brown sugar
1/2 teaspoon lemon juice
2 cinnamon sticks (3 inches)
1 dash ground cinnamon
1 dash ground cloves


DIRECTIONS
In a large saucepan, combine all of the ingredients. Bring to a boil. Reduce heat; cover and simmer for 20-30 minutes. Discard cinnamon sticks. Serve hot in mugs.


Glogg----Yummy!!!!

INGREDIENTS
1 1/2 cups red wine
1 1/2 cups ruby port wine
1 cup vodka
6 pods green cardamom
5 whole cloves
3 tablespoons grated orange zest
4 cinnamon sticks
2 ounces slivered almonds
1/2 tablespoon raisins



DIRECTIONS
Combine wine, port, and vodka in a nonreactive pot. Add cardamom, cloves, orange peel, and cinnamon, and gently warm (do not boil) over low heat. Allow to steep for at least 20 minutes (longer is better). Serve in heatproof glasses, sprinkled with almonds and raisins.


Apple Cider

INGREDIENTS
6 cups apple cider
1/3 cup real maple syrup
4 cinnamon sticks
8 whole cloves
6 whole allspice berries
1 orange peel, cut into strips
1 lemon peel, cut into strips



DIRECTIONS
Pour the apple cider and maple syrup into a large stainless steel saucepan.
Place the cinnamon sticks, cloves, allspice berries, orange peel and lemon peel in the center of a washed square of cheesecloth; fold up the sides of the cheesecloth to enclose the bundle, then tie it up with a length of kitchen string. Drop the spice bundle into the cider mixture.
Place the saucepan over moderate heat for 5 to 10 minutes, or until the cider is very hot but not boiling.
Remove the cider from the heat. Discard the spice bundle. Ladle the cider into big cups or mugs, adding a fresh cinnamon stick to each serving if desired.


Hot Cranberry Citrus

INGREDIENTS
1 (12 ounce) package fresh or frozen cranberries
2 1/2 quarts water
2 cups orange juice
1 cup sugar
1 cup pineapple juice
2 tablespoons lemon juice
4 cinnamon sticks


DIRECTIONS
In a large saucepan, bring cranberries and water to a boil. Reduce heat; simmer for 5-7 minutes or until berries pop. Stir in the remaining ingredients; return to a boil. Reduce heat; simmer, uncovered, for 25-30 minutes. Strain through cheesecloth; discard pulp and cinnamon sticks. Serve warm.


Pumpkin nog


INGREDIENTS
1 (29 ounce) can pumpkin puree
1 pint vanilla ice cream, softened
4 cups milk
3 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/4 teaspoon ground mace
1 cup whipped cream
3 pinch ground nutmeg



DIRECTIONS
In a blender or food processor, blend the pumpkin, ice cream, milk, cinnamon, nutmeg, and mace in batches.
Pour into individual cups. Top with whipped cream and a sprinkle of nutmeg
