A completely thawed turkey (which it must be to fry correctly) in 360 degree oil will cook about 5 minutes per pound.
Make sure to dry your bird inside and out before putting it into the pre-heated oil. Cook the turkey until the internal temperature of both the breast and thigh is 165 degrees for safety (USDA guideline).

5 minutes for each pound. Also, be sure to use peanut oil and no other type of grease to fry your turkey in. Happy Thanksgiving!

3 minutes per pound then add 5 additional minutes at the end no matter how large the turkey is.

I would suggest 4-6 minutes per pound and keep your oil temp @ 280 degrees. I would also use peanut oil only.
