I agree with Michele J. Remember it's "Thanksgiving". A time to reflect about the people we're thankful for, the times we share together. And the blessings that have be given to us.
Your menu sounds great ! and leftovers are the best! Have a great day and HAPPY Thanksgiving to you and yours.

start with a smaller turkey (8- 10 lb) and ham(2lbs). make a small amount of mashed potatoes (only use 5 or 6 potatoes) and one can of gravy. cut the recipe in half for the green bean casserole and the rest should be easy to pare down. remember that even if you have lots of leftovers you can always send some home with your guest.

Its just me and my husband for Thanksgiving this year, becasue hes in the Military and we cant go home, so heres what I'm doing:
-----12 lb turkey w/ oyster stuffing, if you are making ham, you probably dont need to stuff your turkey, you could get a small ham, like a half ham.....
-----Mashed potatoes, I will use about 8 potatoes, so you could use 12 for three people
-----Corn, Im using a frozen bag,its easier
-----Greenbean Cassorole, I use two cans green beans and one can cream of mushrooom soup
-----Can of cranberry sauce
-----And two pumpkin pies, one of which I will be donating to the USO

This amount of food will be plenty, with leftovers, but not so much as to go spoiled..........

The greatest thing about Thanksgiving is the leftovers, My family doesnt get together anymore so every Thanksgiving its just myself and my 2 sons but you better believe I put on a spread I have a 20 pound turkey in my freezer now. Dont cut back continue on you cant go wrong.

For three people, I don't think I would do both the turkey and the ham, but if you feel you need both, then how about a turkey breast or a half of a fresh turkey (available in most grocery stores this time of year).

Sorry to hear that. But first let me suggest that somehow get your spirit back.... It'll come through in your food! Your menu sounds good. Relax and enjoy the day! :)

~~I'd ditch the ham altogether.
~~Roast just a turkey breast (will be plenty of meat for 3)
~~use frozen rolls (Sister Shubert's in the foil pan are the best!!!)
~~Just do one dessert, pumpkin OR pecan pie

Remember "cranberries"!!

If there is only 3 of you..........I personally would cut out either the ham or the turkey...........possibly the ham.

Good luck to you!!
