Roast Chestnuts
2 1/4 lbs chestnuts
Preheat oven to 400°F. Cut a cross in the top each nut into the top of the flesh. Put in roasting pan and bake until skins open and insides are tender about 30 minutes [check, can vary from 10 to 30 minutes].

Here you go. The best chestnuts for roasting are the marroni kind--so look for those at the supermarket.
Be sure that you make your 'x' or slit on the rounded side of the chestnut.
My family used to make a puree, put it through a ricer, add whipped cream and serve as a very rich dessert. My favorite, though, is to eat them hot and then use the rest in a wonderful stuffing for either chicken or turkey. Enjoy!
Roasting Chestnuts in the Oven
The best way to roast chestnuts is over the coals, but if that's not practical Italians generally roast them over a gas burner, in a simple iron pan that has many holes punched through it to allow the flames to touch the chestnuts -- However, you may not have the pan (or want to sacrifice one to the cause) or may not have a gas burner. At this point the oven is your only option.
Preheat your oven to 425 F (210 C). Take your chestnuts and make a cut across the round side of each to keep them from exploding, and arrange them either on a rack or on a cookie sheet. Roast them until the skins have pulled back from the cuts and the nutmeats have softened (exactly how long will depend upon the chestnuts, but at least 15-20 minutes. Remove the nuts from the oven, make a mound of them in an old towel, wrap them up, squeeze them hard -- they should crackle -- and let them sit for a few minutes.

I made them today!!! Use a sharp knife and cut an X across one side. Roast them in a 400 degree F oven for 10-15 minutes. Wrap them in a clean dish cloth, and let them sit 2-3 minutes. This helps the skin to come off easily. Eat!

I love chestnuts!!!! And don't have the patience to wait for them to cook in the oven!!!! lol
So I make a split in the shells, either with a nut cracker or a sharp knife, and put them in the microwave for 30 seconds or so, then remove them. They usually peel very easily, if not then I put them in for a few more seconds

I had some mixed into dressing at Williams-Sonoma the other day... they sell glass jars of chestnuts, and the croutons to make the dressing. It was good, but that's about all I know to do w/ them.
I've never had them roasted like on Mary Poppins... I'd like to try them that way, though!

You can't make them, thats why its been a long time, you'll find them falling off trees thats where they come from.
boil em for 10 minutes then keep em warm in the oven. It helps to remove the shells.
