I got an interview coming up for a county government IT job (not contractor position) on the U.S. East coast. What kind of competition should I expect? Will they more than likely do two rounds of interviews? Any advice?

If it's an east coast position in Maryland, Virginia, Delaware, NJ, NY or Connecticut, there will likely be lots of competition. Having an interview means you passed the first leg. Be excited. Ignore any other prospective applicants.

If it's in a county that has a poor economy and that people are quickly moving away from, then your prospects may be higher. Just make sure you check out the cost of living before accepting a salary offer.

I believe that any government job in the eastern states will be highly competitive. There are many people who enter that job market when they don't further their formal education. The fact that the area is the most heavily populated will produce a greater number of competitors. Be at your best and don't worry what the other person does; concentrate on what you have to offer.
