I heard that its more convient to steam before you fry , has any one ever tryed this?

My mother coats her chicken with flout then quickly browns it in a heavy skillet with just a bit of oil Then she puts into a preheated oven, covered. Makes delicious moist chicken.

If you are frying it very hot it would be easy to over cook.. You want the meat to just slide off the fork if you test it for doneness.

if you poke it and its hard then you hve over cooked it.. if you poke it and it give a little but then becomes solild your in the money.. use a thermo-meter if your unsure
