My favorite versions of these items:

Yummy Sweet Potato Casserole
INGREDIENTS
* 4 cups sweet potato, cubed - I used 8 fresh sweet potatoes and baked them at 325 degrees for about an hour and a half
* 1/2 cup white sugar
* 2 eggs, beaten
* 1/2 teaspoon salt
* 4 tablespoons butter, softened
* 1/2 cup milk
* 1/2 teaspoon vanilla extract
* 1/2 cup packed brown sugar
* 1/3 cup all-purpose flour
* 3 tablespoons butter, softened
* 1/2 cup chopped pecans
DIRECTIONS
1. Preheat oven to 325 degrees F (165 degrees C). Put sweet potatoes in a medium saucepan with water to cover. Cook over medium high heat until tender; drain and mash. (see my note at the top - they are MUCH better baked)
2. In a large bowl, mix together the sweet potatoes, sugar, eggs, salt, butter, milk and vanilla. Mix until smooth. Transfer to a 9x13 inch baking dish.
3. In medium bowl, mix the sugar and flour. Cut in the butter until the mixture is coarse. Stir in the pecans. Sprinkle the mixture over the sweet potato mixture.
4. Bake in the preheated oven 30 minutes, or until the topping is lightly brown.

CREAMED PEAS AND ONIONS

2 c. shelled peas or 1 (10 oz.) pkg. frozen peas
1 c. whole pearl onions or frozen small whole onions
1 tbsp. butter
1 tbsp. all purpose flour
1/2 tsp. salt
Pinch white pepper
1 c. milk
Grated Parmesan cheese

In a covered saucepan cook fresh peas and pearl or frozen onions in boiling salted water until tender, about 10 minutes. (If using frozen peas, add to onions only during the last 5 minutes). Drain peas and onions well.

Meanwhile, melt butter in saucepan over low heat. Blend in flour, salt and white pepper. Add milk all at once; cook and stir until thickened and bubbly. Pour over hot vegetables, stir to coat vegetables. Serve in sauce dishes. Pass Parmesan cheese. Makes 4 servings.

I really like the Uncle Ben's Wild Rice boxed mixes. They are quite good.

Good luck!

I don't have to do anything for Thanksgiving this year - a first for me in as long as I can remember. We are going to dine out. I am pretty excited!

Well, you are indeed a big help. I roast and stuff the turkey with my secret dressing. I make mashed potatoes, sweet potatoes, onions, cranberry sauce with rhubarb, brussel sprouts, candied carrots, gravy galore, munchies for starters, and that's all I can think of now. Everyone has a hard time leaving the table - they cannot move.

Well...it will go one of two ways, TD. Either I'll be doing everything, with no help whatsoever (as everyone will be drunk--they start in the AM). The other possibility is that I'll go up to Nevada, and not do a dam thing but eat.

All the rest of it... The turkey, the tenderloin, the spuds, the green-bean casserole, the cresent rolls, the drinks, desserts, all that stuff! OK I guess it's not the whole "she-bang!" but it's enough!!

I have the most important job of all.

I must show up and eat plus help take some left-overs home. LOL Hey, it has to be done and I am willing to pitch in selflessly and help out. It's the kind of guy I am. :)
