How about a fruit salad?
HARVEST APPLE SALAD (serves 10 people)
1 (20 oz) can chunked pineapple
4-5 c diced apples
1 - 1 1/2 c celery - diced
1 1/2 c halved green or red grapes
1 c mini marshmallows
1/2 c chopped pecans
Enough pineapple juice and water to equal 3/4 cup
3 T lemon juice
3 T butter
2 T cornstarch
1/2 c sugar
Combine the pineapple juice, lemon juice, butter, cornstarch and sugar in a pan. Whisk and cook on low until it thickens. Cool completely and pour over the fruit. Mix well, refrigerate, and when cold, serve. (you can use 2 T flour in place of the cornstarch but if you do, cut your sugar to 1/3 cup.)

This is an easy but great little salad idea. Adjust the portions as you need.
1 Bag Spring Mix greens
Sliced almonds (toasted)
Dried cranberries
Dressing:
1 part Raspberry Viniagrette to 3 parts extra virgin olive oil.

One of my favorites is a layered salad:
Place about an inch and a half of torn lettuce on the bottom of a deep square dish. Next, layer Miracle Whip or comparable spread. Drain a can of Le Seur green peas, and spread on top of dressing. Continue layers with sliced boiled eggs, chopped green bell pepper, chopped red onion, bacon pieces, and finally, shredded cheddar cheese.
These are my own preferences. You can add olives, tomatoes, turkey, ham, cucumbers, and anything else you like.
As well as tasting great, it looks beautiful in a clear glass serving dish.

I was asked to bring a salad last year...so I went to Bed, Bath & Beyond and picked up a spinner dish that had 8 separate compartments... in each compartment I put a different salad topping...ie: cheese, egg, bacon, tomatos, cucumbers, onion, green pepper, ham.... It was a hit--that was everyone would eat it..too many salads have something in them someone doesn't like, this is the safest way. :) You'll impress them too!! Don't forget the dressing & croutons! :)

If it's a green salad, put in some asparagus, hard boiled eggs black olives, garbanzo beans, kidney beans,
I like to make a shrimp salad for Thanksgiving, just salad mac. mayo, celery, boiled eggs, some season all and of course shrimp, you can put frozen pea's too if you like them.

My favorite right now is romaine lettuce, baby spinach, avocado slices, real bacon pieces, minced shallots, and a few croutons with some asiago cheese grated on top. Combine this with a raspberry vinaigrette or a vidallia onion dressing...YUMMY!

make an ordinary garden salad and add pine nuts, walnuts (or any other kind you like) and top with grated cheese (marble is always good)....gives a few different flavours and textures to the regular salad.

This is one of my simple faves:
Mixed field greens (I also like to add chopped bibb/butter lettuce)
glazed/candied walnuts
crumbled goat cheese
chopped green onion
orange slices (with that outer skin cut off as well, just pulp)
for dressing:
olive oil
fresh squeezed lemon,lime and orange juice
white vinegar
s&p

red cabbage
ice berg lettuce
Chinese chow mien crunchy noodles
Chinese chicken salad dressing.. (it comes in a triangle shaped bottle)
simple and good...
