accompiaments to peanut sauce..?

i need something to go with this amazing peanut sauce i have. i know there's noodles and chicken that taste good with it..but are there any veggies that would taste good mixed in too??

My next door neighbors (when I was a teenager) were Indonesian-Dutch. She would steam all kinds of veggies (carrots, celery, zucchini, etc.), place it in a plate in front of her hubby. He would pour his peanut sauce over the veggies and then crumble Fritos over the peanut sauce. He loved that. Hope that helps. She would make her peanut sauce with dried cayenne peppers that she ground herself (with seeds - HOT!!!), the peanut butter, and water. Mixed it all up and he poured that over his veggies. So any kind of veggie you can steam would go good with it. the Fritos added texture, salt, and crunch.
