one of my friends is throwing a cultural potluck tonight and we all picked a country. I picked austraila and i have to bring a dish from there. what should i bring. oh and by the way.... i only have about an hour. Thank you so much.

I have an Australian Cookbook and it shows pictures of quiches, baby pizzas done on puff pastry with tomato paste salami, tomatoes, mozzarella cheese, stuffed olives, anchovy fillets and basil. There are salads with shrimp, mango, avocado and chives served with a French dressing. It is called Seafood with Mango. Another salad is Seafood with Smoked Salmon cream - has scallops, shrimp, oysters (they sound raw in the dish - only the scallops and shrimp talk about being cooked.

The book has crepes in it with liqueurs in the sauce. They have a spinach pancake with ricotta cheese (looks like a green crepe. Has tomato-onion sauce over it. Lots of different kinds of crepes. Mousses. - all kinds of pizzas with crispy crusts. Pasta with sauces. Layered Garden Salad (lettuce, peas, hardboiled eggs, mushrooms, cheddar cheese, dressing of mayo, sour cream, mustard, lemon juice, then a sprinkling of green onions, tomato, bacon and chopped parsley.

Saffron rice. Seafood salad with crispy noodles - look like Top Ramin noodles.

Steak with Piquant butter. Beef with Peppers and Pineapple.

Brown rice rissoto. Tomato and Cheese patties - they look like croquettes - sliced tomatoes in the middle, mozzarella cheese next to it, potatoes with butter, salt and pepper around it, then dipped in flour, eggs, and bread crumbs and fried till golden brown.

Desserts are Lemon Sour Cream Cake, Walnut coffee cake, lots of fruitcakes, Spiced pumpkin pie, apple pie, ice creams and sorbets, Boiled Christmas pudding, Plum pudding, White chocolate truffles.

Drinks - Punches (Coconut Pineapple Punch - 1 (14 oz) can coconut milk, 1/2 c vodka, 3 c canned pineapple juice, 1 T powdered sugar, 3 T mint-flavored liqueur)
FRUIT PUNCH - 2 (8 oz each) cans crushed pineapple, 3 passion fruit, 1 c lemon juice (apx 5 lemons) 2 c orange juice (apx 6 oranges, 2 (10 oz) bottles soda water, 1 T sugar

I know you said you only have about an hour so stop off at your local pizza place and you should be good to go or your local store for a quiche.

Grab some rice salad from the deli, some cooked prawns(shrimp) from the meat section and a bit of ham...

Used to get a lot of shrimp and ham salad in Oz ...

Quick, easy and you can do it on the drive over...

Well seafood is pretty Aussie...do a prawn and rice dish with a salad.
