Excellent question! I always like to deconstruct these often quoted phrases, as they tend to change meaning over time. Traditionally we came to understand it as being humble, but ...
Being poor simply means lacking something. It's a state of not having enough. Being poor in spirit therefore means to have a longing for something more, longing for God's Spirit. Incidentally it is those individual who will see God according to Matthew 5:8. It seems those who long for God's Spirit are also the same ones who actually want to see God. Jesus is right on with this one.
Praise God for His unfailing Word.

The poor in spirit are those that recognize that they have a "lack" of understanding of divine Love, and are perpetually reaching out to find Truth. These are the true seekers who will not turn away. Those who do not know they are poor in spirit are still lost sheep.

It means to be humble. The poor are typically not proud (in the negative snese of the word). They typically do not act as if they are better than others. They are, many times, more giving and accepting than those who have much to give. Being poor in spirit means that, no matter how much you have in the material world, you need to remember that you are worth nothing without Christ.
I don't personally believe that, but that's what it means.

To be poor in spirit means one is aware they are spiritually bankrupt apart from God. It is the opposite of self sufficiency. This person is very conscious of their lostness and hopelessness apart from the divine grace of God.

To be poor in spirit is to be humble. It is to acknowledge that all things, including ourselves, belong to God.

It means spiritually you have nothing in you. You are not full of God's holy spirit nor are you full of any other type of "spirituality".

Humble is what that means. God does not appreciate haughtiness in people but prefers us to be humble in nature, realizing that we are not any better than anyone else, regardless of our circumstances.
