i never had fresh cranberries before, and i don't know if you just eat them like you would a blueberry, or do you have to do something different? thanks in advance ^^

Fresh cranberries are usually very tart and not tasty. Here is the recipe that I use...

2 cups cranberries
Juice and chopped zest of 1 orange
1/2 cup sugar, or more if needed
1 teaspoon cinnamon
1 tablespoon cornstarch

In a small saucepan combine cranberries, orange juice and zest, sugar and cinnamon. Bring to a boil, reduce heat to simmering and cook until cranberries are tender, stirring occasionally. In a small cup make a slurry with cornstarch and 1 tablespoon water. Whisk cornstarch mixture into cranberry sauce and cook, whisking, until sauce thickens. Taste and add more sugar, if necessary

CRANBERRY SALSA

12 oz. fresh cranberries
3 small oranges, peeled, seeded, and sectioned
1 small red onion
Chopped cilantro, (leaves and stems), to taste
2 jalapenos
½ cup honey
3 tablespoons lime juice
½ teaspoon ground cinnamon
Salt to taste

Place the cranberries in a food processor and process them until finely chopped. Empty the cranberries into a separate bowl. Place the oranges, onion, cilantro and jalapenos in the food processor and finely chop. Mix with the cranberries and the remaining ingredients. As like any other salsa, serve it with tortilla chips or spread it over grilled pork chops.

I'm with naked hike - I like them raw. Growing up, I considered it a treat when my mom would give me some of the cranberries before she made her sauce for Thanksgiving each year. Now, I still love them that way. Definitely not for everyone, but you might at least try a couple and see what you think! Happy Holidays!

NO, they are usually cooked because they are hard and quite tart.

I have made a cranberry relish before (non-cooked) that was excellent. In a food processor, put 2 cups of cranberries, a small granny smith apple, a small red delicious apple (cored, but peel on), and a small orange, peeled. Whirl utni lchopped but not pureed. You wan to see specks of all different colors throughout it. Best if made the day before serving, and stored in fridge.

Yipes, fresh cranberries are very sour. I wouldn't recommend just eating them raw like other berries. You may want to cook them down with some water and sugar to make a jelly to top your vanilla ice cream.

I just rinse them and put them in my blender for smoothies along with the other ingredients or eat them raw.

Keep in mind that most people can't handle the flavor of a fresh and raw cranberry. They are very bitter, but as a fruit that is used as a mixer or ingredient for something else like sauces, juice drinks, and fruit salads they are delicious.

They are also very good for you, high in antioxidants, vitamin c, etc..

Banana Cranberry Bread
INGREDIENTS
2 1/2 cups white sugar
1 cup shortening
3 eggs
3 mashed bananas
1 cup cranberry sauce
1/2 cup milk
1 teaspoon vanilla extract
4 cups all-purpose flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup chopped walnuts

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
In a large bowl, cream together the sugar and shortening until light and fluffy. Beat in eggs, and mix in bananas, cranberry sauce, milk, and vanilla. In a separate bowl, mix together flour, baking soda, baking powder, cinnamon, and nutmeg. Gradually blend flour mixture into the banana mixture. Fold in walnuts. Pour into the prepared loaf pans.
Bake for 50 to 60 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes, then turn out onto a wire rack, and cool completely.


OR

Cranberry Pork Chops
INGREDIENTS
6 pork chops
2 cups fresh or frozen cranberries
3/4 cup white sugar
1 teaspoon salt
1/4 teaspoon ground black pepper
water as needed


DIRECTIONS
In a skillet, brown chops slowly in oil; drain.
Add cranberries, sugar, salt and pepper to chops with 1/2 cup water to start. Bring to boil; reduce heat. Simmer, covered, for about 45 minutes or until tender but not dry. Add water if necessary to keep chops from drying out.
