We have a church function and are making two turkeys. We decided to do one before going to bed and the other in the morning. So, we just wanted to know if anyone knows the best way to keep the turkey moist till we use it the next day.

Rule #1 for a moist turkey: Brine it before roasting it.

Rule #2: Don't overcook it. Take it out of the oven when the thigh (not near bone) reads 150ºF. Then let it rest for 30 min, covered w/ foil, for it to reach 165ºF. I use a digital meat thermometer w/ an alarm on it that tells me when my meat has reached my desired internal temp.

Correlary to Rule #2: Baking it overnight will overcook it.

Cook the turkey with strips of bacon on its skin. It will keep it moist and juicy during cooking and make a juicer bird when carved.

Is it possible to go ahead and slice the cooked turkey and put in a large container, then pour gravy all over it and serve it that way the next day (after re-heating)?

Put your turkey in one of those oven cooking bags before cooking it.
