so, i make chicken dishes a lot, and all i can think up of are beans, asparaguses, mashed ptatoes, and corn... what else are there??

Here's a few of my favorites.

RICE AND BROCCOLI CASSEROLE-
10 oz. broccoli, thawed, not cooked
2 c. Minute Rice, uncooked (I use Success Rice)
1 can cream of celery soup
1 soup can water
8 oz. Cheez Whiz
1/2 stick butter, melted
Spray the baking dish with a non stick spray.
Mix all ingredients together and put in the baking dish and bake for 30 minutes at 350'.

Hashbrown Potato Casserole
2 pounds. frozen hashbrowns potatoes, thawed
10 oz pkg cheddar cheese, grated
8 oz. sourcream
1 can cream of celery
1 tsp. salt
1 tsp. pepper
1/2 stick butter, melted
Mix all other ingredients together. Put in greased casserole. Bake at 350' for 45-55 minutes

Souplantation's Joan's Broccoli Madness Salad
6 to 8 servings
1 bunch uncooked broccoli, cut into florets
1/2 cup crumbled cooked bacon
1/2 cup cashews
1/3 cup raisins
1/4 cup chopped red onion
DRESSING
1 cup mayonnaise
1/3 cup sugar
2 tablespoons apple cider vinegar
Mix the broccoli, bacon, cashews, raisins and onions in a large bowl. In a second bowl, beat dressing ingredients together gently until smooth. About 10 minutes before serving, toss the salad with the dressing to allow flavors to meld.

Tater Tot Side Dish
1 (16 ounce) bag tater tots (I use whatever small bag is on sale)
2 cups of shredded cheese
5 pieces bacon, cooked and crumbled
1/4 cup chives
1 (8 ounce) container sour cream
Cook tots in oven as directed. Don't turn off oven.
Take off cookie sheet and place in a casserole dish. Sprinkle cheese on top of tots. Crumble bacon on top of cheese.
Place uncovered back into preheated oven 10-15 minutes, or until cheese is nicely melted. Sprinkle chives over the top. Serve with sour cream on the side for dipping, also ketchup works well for the kids. From www.recipezaar.com

Corn and Bean Casserole

1 Can Sweet Corn
1 Can Green Beans
1 Can Cream of Celery Soup
1 Cup Sour Cream
1/2 Cup Slice Almonds
1 Sm Can Mushrooms
2 Cups Shredded Cheddar Cheese Divided
1 Sleeve Ritz Crackers
1 Stick Butter

MIx first 6 ingredients plus 1 1/2 cups cheese together and place in casserole dish. Crush crackers and mix with melted butter. Layer remaining cheese over casserole and cover with cracker and butter mixture. Bake at 350 for 1 hour.

This is one I get requests for all the time.

VEGETABLE BUNDLES

Carrots
Celery
Leeks
Chicken broth as needed
Butter
Salt & pepper
Chopped parsley

This is an elegant looking, although time consuming dish. You’ll need an equal amount, (by weight), of the three vegetables, after trimming. Figure on four to six ounces per person. First, peel the carrots, trim the celery, and remove the dark green parts of the leeks. Leeks are very sandy by the way and must be rinsed thoroughly. Then weigh out an equal amount of each vegetable. Next, julienne the vegetables into strips about 2 ½ inches long and no more than one eighth inch wide. Then take the dark part of the leeks and cut strips ¼ inch wide. Blanch the strips in boiling water for no more than ten seconds and then run under cold water. Gather up equal amounts of the julienned vegetables and make little bundles about an inch in thickness. Tie the bundles with the dark green leek strips, trimming the excess. Place the tied bundles in a sauté pan and add enough chicken broth to come half way up. Add butter, salt and pepper and simmer, covered, until the vegetables are soft. Sprinkle with chopped parsley before service.

An alternative to this recipe, which eliminates one step, is to forgo making bundles out of the vegetables. After slicing them, either simmer them in the chicken broth and butter, or sauté them in butter and/or olive oil with no broth.

Take a big can of yams mash them a little lumpy is fine add brown sugar to your tastes heat in a pan using medium heat just til hot then spread in any type of cake or pie pan about a 1/2 inch to 1 inch thickness put cinnamon sticks decoratively throughout then cover with big marshmellows put in oven 350 degrees for approximately 25-30 minutes til marshmellows are melted and slightly brown on top cool and serve they are delicious and a favorite of my loved ones makes a good side dish.

Cacik
1 clove of garlic, minced
1 cup cucumber, diced
1 1/2 cup plain yogurt
1 cup water
1 tsp salt
Extra virgin olive oil
Fresh dill, chopped

Place the garlic, salt, yogurt and water in a medium sized bowl. Mix with a wooden spoon until it is blended very well. Add diced cucumber and mix again. With a ladle pour into small bowls and then add 1 tbsp of olive oil on top of each. Garnish with fresh dill.

Cacik goes very well as a side dish with white beans, rice or chickpeas.

* This is a vegetarian dish.

Pasta, various rice dishes, veggies, stuffing (there are zillions of easy stuffings that can be made with crumbled muffins as well as bread, rice, toast.....
Or try this one!

1 can cream of chicken soup
1 can chicken with rice soup
1 tbsp. parsley flakes
1 tbsp. grated onion, dehydrated
1/2 tsp. celery salt
Dash of pepper
Salt to taste
2 c. minute rice
1 c. water

Mix all ingredients together in casserole dish. Cover and microwave 9-10 minutes.

Any kind of squash, par-boil or roast in oven with chicken.
Turnip, carrots, broccoli, brussel sprouts, cauliflower, etc.
Go to the produce section & choose by colour.

Fresh vege sticks presoaked overnight in vinegar & sugar... nice. Sour and sweet taste.
