Substitute white vinegar in it's place but reduce the amount by half. The acidic value is higher then rice vinegar

Just leave it out. You really won't mioss it. I make salted eggs a couple of times a year with just salt and water. I have tried adding seasonings but find so little flavor gets through the shell it is not worth it. Although soy sauce did work.
