I need to make a Waldorf Red Velvet cake for my sis' birthday, which is on Thanksgiving Day. It's always been her 'traditional' cake on her b'day. I'm making it from scratch with a recipe calling for buttermilk. I'll have to make it on Wednesday, so does it have to be refrigerated after it's made?

No it doesn't have to be (=
There's lots of pastries that have buttermilk in them (like biscuits) and they don't need to be refrigerated. It won't spoil.

All cakes can be made ahead of time. I usually make cakes, especially things like Red Velvet or Devils Fun a day ahead.

About half of all cakes call for buttermilk, the rest call for sweet milk. No, they do not have to be refrigerated. They will be fine on the counter waiting for the Birthday Girl.

Devils Fun and cakes like it do have to be refrigerated as they have custard filling in them.

Tell your sister happy birthday!!

No, it shouldn't have to be refrigerated after baking (even w/ buttermilk in it), unless it has cream cheese icing on it.
