Often times the inside doesn't get up to temp. Also without the stuffing the bird can cook faster,

It is safe as long as you ensure that the deepest interior point of the stuffing is hot enough to kill any bacteria that seeped in from the turkey. Put a meat thermometer into the stuffing. Also, you should remove the stuffing when packaging up the leftovers. Put it in its own container so both the left over bird and the stuffing will cool as quickly as possible.

Cooking turkey with stuffing is becoming increasingly unpopular. Since the stuffing prevents heat from entering the bird, the bird takes longer to cook through and the outer parts dry out.

The trick is to get the stuffing to a safe temperature. The problem is if the stuffing is done (165 degrees F) then the bird is overdone. If the bird is done then the stuffing will not reach 165 degrees. In smaller poultry it is possible to achieve this but any turkey under about 11 pounds is more bone than meat

The risk is that the interior of the turkey (and stuffing) won't get hot enough if stuffed to kill any bacteria. So the stuffing is in there, usually w/ raw eggs, just simmering away at a tepid temperature.

Instead, fill the turkey's cavity w/ aromatics (thyme, garlic, onions, lemons, orange, apple) and put yoru dressing into a separate casserole dish.

Incorrect....you MUST not make the stuffing an earlier than you plan on using ex: you cannot make it the day before. I would suggest that you go to butterball.com. You can successfuly cook stuffing in the bird, I believe the temperature needs to be 175 degrees. PLEASE DOUBLE CHECK that number

i don't think it is safe. i'd rather stuff the bird after it's been fully cooked. or serve stuffing as a side dish.

True. You run the risk of cross-contamination. Unless you do it when the turkey is cooked.
