I'm not sure I understand the question....
Everything people say gets "interpreted". People say things, and outside of their original context, the meaning can be lost, or worse than lost; it can be changed.

You raise two points. First, we have to admit that men wrote the words that God gave them (Second Timothy chapter 3 and verse 16). Quite a bit of the Bible is a direct quote of God speaking to man, especially in the Old Testament ("thus saith the Lord", e.g.). The Gospels contain a selection of what Jesus said and did, but certainly not all. Saint John said, in the last verse of his gospel, that the whole world couldn't contain it all, if everything was written down! So, "written by man" means just that: selected men wrote the words that God wanted them to write. There is a technical term some people use called "verbal and plenary inspiration" which means, first, that God gave the WORDS (verbal) of the Bible, as originally given. Plenary means that the records are equally and totally inspired; in other words, there aren't some parts more or less inspired than others. The bottom line is that we can trust the Bible as no other book in history!
As for interpretation, could you explain what you mean?

Jesus's word is interpreted in that is how we make sense of His meaning. This is a Man who spoke in parables. Even though his words were written in reference to what He spoke, they weren't written into the Bible by Him. So again we as humans can only interpret the meaning of His words and write it as it is understood.
I don't think this takes away from the Bible or Jesus's teachings unless it is tampered with intent to deceive. However I don't think thats what you are referring to here.

The history of the Bible shows that it was always subjected to editing and interpretations, such that changes were made all the time to it.
Compare it to 'The Talmud Jmmanuel' text version. Is this the original text version? Which became changed/edited to the Christian version we have today.
Does the Bible text - actually make sense to you?
Do you believe in it, and what Christians say?
Or is it simply "preaching" to you all the time, in which you are threatened and then told to behave in certain ways - which really are not sensible?

God has always chosen men/women to carry out His work on earth. He annoints them for service and they carry out His work under His guidance through the power of the Holy Spirit. Read in the Bible all the times God called different people and they answered "Here am I, Lord". He moves on people individually to surrender their service to Him and that's how He operates.....always has and always will. Otherwise, when we are saved (accept Jesus as our personal Savior) God would just take us to heaven then. No, He leaves us here for His work to go on through the human vessels that surrender to His will. The writer's of the Word, the Bible, were overtaken with the Holy Spirit and recorded what God wanted them to record. Even interpretation from one language to another takes God's approval. He curses those who add to or take away from His Word. There is power in the Word of God because Jesus IS the Word (John 1). The Word is more than ink and paper, It is alive and powerful. It has preserved Itself through time and under different men's recordings because It is "alive"......an Entity.....Deity......the Son of God, made flesh and then under the Holy Spirit's direction, recorded for eternity. It cannot be destroyed and It will not be changed.

Unlike the Qur'an, in which God directly talks, the Gospels are about Jesus - what he did and what he said.
You can see that just by scaning through it.
