1 loaf day-old white bread, crust on, cut into 1-inch cubes (10 heaping cups)

Use the dry bread but just add a little extra fluid.
I usually use any bread i;ve got to hand and whizz it in the food processor when I make stuffing.

No, the flavor and texture will suffer. There' so much good stuff going on in this recipe, I wouldn't risk messing it up with the dried cubes. It will be difficult to figure out exactly how much you should use to substitute for the fresh (the cubes will be denser than the day-old bread)

Dried cubes are OK if your recipe is designed for them.

Yeah you can by the cubes or put the bread in the oven on a very low setting to dry it out.
