Funnel cake
2 eggs
1-1/2 cups milk
2 cups sifted all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
2 cups vegetable oil
1/4 cup confectioners' sugar
Sift together the flour, baking powder, and salt. In a large mixing bowl, stir together the eggs and the milk. Add flour mixture to the egg mixture, and beat with a mixer until smooth. The consistency should be thin enough to run through a small kitchen funnel. Test it, and if it is too thick beat in a little more milk; if too thin, beat in a bit more flour. In an eight inch skillet, heat the oil. Put your finger over the bottom opening of the funnel, and fill the funnel with a generous 1/2 cup of the batter. I don't see why not. Most recipes call for a deep fryer because you can regulate the temperature better on a nob like appliance. But if you get the temperature right for it to cook and not be raw or burn then there is no reason why you can't. I deep fry everything in a pan. I have never used a deep fryer.

Yeah, get a frying pan and put enough oil in it to cover the funnel cake (but not boil over) and cook.

Yeah get a deep skillet and put about half an inch of oil in it. Make sure it doesn't get too hot and use a funnel and thinned pancake mix.
