r mild,with slaw r with out,pork,beef,goat,turkey,chicken,or deer?

Fun question, but a very difficult one. It's like having to pick a favorite song.

We're fortunate to have experienced barbecue in the styles of Memphis (dry rub and wet), eastern and western North Carolina (pulled pork, chicken and ribs) and Texas (brisket) and I have to say that our favorite barbecue is the one we're eating at the time. :-)

We don't get much goat and deer in our markets here in the US since the meats in our grocery stores are regulated and inspected by the USDA (Department of Agriculture).

Lunch today was barbecued pulled chicken sandwiches with a nice western Carolina style slaw on top, so I would say that's the current favorite.

I did not know you could get barbecue sauce in a bottle until I was about twelve years old. My Mom always made it and it was a southern style she learned from an old black lady in South Carolina. Don't give me a hard time about the black lady statement, there is no racist meaning to it. Anyway it had vinegar and bacon and spicy and there is nothing better. I can get close but cannot duplicate it. I live in Oklahoma now where barbecue is everywhere but it is all too sweet for my taste. I do mine with a dry rub, no sauce. In my smoker, low and slow.
Goat however I have had at Mexican's barbeque's especially weddings and that is dang good eats. They just roast it over the fire and have pico de gallo . Scrape the meat off into a homemade tortilla. The best deer has been soaked in orange juice and rubbed with black pepper. Also Had deer where the loin was poked with a knife and the holes stuffed with garlic cloves and jalapeno peppers then smoked until done, about 6 hours. Also very good.
Slaw is always good. Some better than others but never had a bad one. Prefer mine not sweet.

IMO, it's hard to beat the Carolina style BBQ with the vinegar sauce. Memphis BBQ is good too and you can find it everywhere. Kansas city has a sweet sauce.........not my favorite.
