I'm trying to make a sugar free pumpkin pie and you need to cook vanilla pudding with pumpkin. I only have the instant kind. What would happen if I cooked it? Can I just make the pudding then add the pumpkin or would the consistency be really odd?

What would happen if I heated up the already made instant pudding? Could I heat the pumpkin up and then add it? Would that make a difference? Wow way too many questions.

I don't know if instant pudding can be cooked and I think if you just added the pumpkin to it it would have an odd constancy - if it were me, I would go and buy the pudding mix that you have to cook especially if this were my first time making the recipe.

Make your vanilla pudding from scratch.
here is the recipe:
3/4 cup sugar
1/3 cup plain flour OR 3Tbsp cornstarch
1/4 tsp. salt
3 slightly beaten egg yolks
2 Tbsp butter
1tsp Vanilla
In a sauce pan add sugar,flour,salt; gradually add milk. Cook and stir over medium heat until bubbly. remove from heat. Stir small amount of hot liquid into yolks to temper then a little more. now return to pot and stir cook 2 minutes remove from heat add butter and vanilla.

I'm assuming by your comments that you don't want to make the pumpkin pie from scratch. If you do want to make it from scratch, just replace the sugar called for in the recipe with Splenda and continue with your recipe.

If you are making it for a diabetic, it's up to their particular diet whether they can have the crust underneath or not.
