Cinnamon Glazed Carrots

1 pound carrots -- cut as directed
1/3 cup unsweetened apple juice concentrate -- thawed
1/2 teaspoon ground cinnamon

Peel and slice the carrots into 1/4-inch thick rounds (about 3 1/2 cups). Combine ingredients in a large saucepan and stir well. Bring to a simmer, cover, and cook over moderate heat for 15-20 minutes, until carrots are tender-crisp. Cook uncovered 3 to 5 minutes more or until liquid is reduced to a glaze.

I love stewed okra or stewed zucchini. Fry some bacon. Saute some onion in the bacon grease. Add a can of chopped tomatoes. Add the okra (frozen or fresh) or zucchini. Crumble the bacon and add it. Simmer until the vegetable is tender. Use alot of salt. Every time I make this, people rave over it, and it is so easy. The flavor meshes well with the taste of ham.

All of the suggestions sound good - creamed spinach, broccoli and/or cauliflower with cheese sauce, whole green beans with almonds - every thing except the Brussel sprouts and greens (I don't like either one - lol). Save a plate for me please.

I was going to say candied carrots but see that is taken so my second choice would be sweet potato or yams.
