I am hoping to do something quite similar to either of these cakes...I'm in love with the pink one...

Cake central is an amazing place. I've included their homepage but also a link to a sculpted cake. I think it will help you visualize the foundation of your cake.

If you keep searching through someone made a cinderella cake for their daughter. You have to be logged in to view it but it is quite a treat!

As a worker in a bakery, I can give you some advice. =]

I would bake a 16" round (or larger, if you want) cake and ice it. In the first picture the cake is entirely coated in rolled fondant, which is a sort of edible play-doh. I don't ever use fondant; while it is smoother than frosting, it tastes disgusting and you have to peel if off to eat the cake and it leaves the cake messy and unappealing. I would then bake two bundt cakes and put one upside-down on the iced round cake. Put a layer of frosting on the upside-down bundt cake and place the other one on top, right side up (so both cake bottoms are touching). You should have a pumpkin-shaped cake resting on the round layer; it will be even better if you use a scalloped pan like this for the bundt cakes:

I would suggest homemade buttercream frosting; it has a thick, heavy consistency that works well for both frosting and decorating cakes. You can pick up a set of decorator tips at Walmart and get some disposable frosting bags and gel food coloring while you are at it. Color the frosting the way you want, but be aware that the more color you add, the more risk you take of making the frosting bitter. Scrollwork with the frosting isn't difficult; just practice on a paper plate for a bit. Good luck!
