I want to fix a Prime Rib Roast but there is only me and I obviously will not eat the whole thing. So do you have some ideas for leftovers?

If you have a BBQ grill, get it very hot and drop it on. Depending how thick it is, Maybe 1" you would give it 3 mins on one side and 2-3 min. on second side. This will seal in the juices, not cook the middle anymore and brown some of the outside fat......The only way I do it with Prime rib. If you don't have a BBQ a very hot frying pan will do the job also

Reheating beef is a little tricky unless you like it well done. You can cube it up and freeze it (but wrap it tight). Cubing it makes it easier to reheat and you can use it for recipes that don't have temperature preferences. Or you can use this to make a great pasta dish. Maybe with a cream sauce and mushrooms. We do this with our leftover roast beef.

you can freeze what you dont eat. There is no reason to do anything with a piece of prime rib but eat it like it is.

yes,I would slice it and buy some wonderful fresh bread from paneras or fresh market and make some nice brown gravy and pour over the meat and lay on the bread i would leave it open faced and pour gravy completely over the whole thing!!
sounds YUMMY!!
Ok for a little less fattening you could also warm it up and make a nice salad by slicing it over then slicing some boiled eggs and celery and tomato throw it all together..
you kinda need crinkled up blue cheese over it for that..hubby hates blue cheese but i love it.
