You can use them for anything. The water in the can might give them a different flavor but as long as they are done, you should be able to use them in potato salad, mashed, etc.
The only way I've seen them used is in stews but I don't see why you can't branch out with them.

I wouldn't mash them. Slice them or cut them up just a bit, but in a frypan with a little butter, add some grated, and finely chopped or thinly sliced (your preference), salt & pepper & some paprika for color. Simmer all that up, turning occasionally while potatoes brown. You have some pretty decent home fries.

Boil some cabbage and Polish or Italian sausage, throw the potatoes in when the cabbage is done!
