Service with a white sauce made with evaporated milk. You would get all the protein nutrients of the milk as wells as vitamins A, D, B12 and calcium.

Are you adding it for a child because they don't want to take their vitamins or are picky eaters? Or is it for a person who has throat problems and can't swallow anything larger than the instant mashed potatoes?
I've chewed vitamins when I was young because pills just wouldn't go down. I can tell you they taste nasty to chew. They might even change the color of the potatoes - of that I don't know but it's just a thought. I would hide the vitamins/minerals in a juice if that is your intent. They do make drinks that contain added vitamins and minerals.
You could give it a try on yourself. Open a vitamin pill, dissolve it in a little butter that you put in the mashed potatoes - just a little to taste - and see if you can taste it. If not, then you are good to go. Some vitamins and minerals are fat soluble and some are water soluble so between the butter in your recipe and the water, they should dissolve.

Why wouldn't you WANT to change the flavor? I don't even understand why they exist. It's not all that hard to cook a real potato and mash it. I don't eat prepared foods at all because of all the additives and high sodium content in most (plus I can cook), but I've had those things.... they don't even come close to tasting like a potato. They should give them another name. And if you want nutritional value, that's the last thing you should be making.

well i always bake a couple potatos,
- let them cool and peel off the skin
-than mash them into my instant potatoes!
you can tell a big difference and its really easy!!

They're pretty much pure starch!
Try garlic, or cheese, or mushrooms.
