PROSCIUTTO CHICKEN

4 to 6 boneless chicken breasts
1/4 lb. sliced Prosciutto
Fresh mushrooms, sliced
1 can chicken broth
3 tbsp. butter
3 tbsp. flour
1 tsp. lemon juice

Saute chicken that has been rolled in flour and cook in butter. Add salt and pepper. To pan drippings, add flour and make a thick sauce. Add broth, mushrooms and lemon juice. Arrange cooked chicken in greased pan and arrange sliced Prosciutto on top. Add gravy and cook at 350 degrees for 25 to 30 minutes.

Crawdad Pie. (Shrimp, cheeseburger, or chicken pie. Whatever you have in the fridge)

Dump some big salad croutons in an 8x8 cake pan sprayed with nonstick spray.

Sautee onions, bell peppers, garlic, celery, mushrooms, and your favorite seasonings. Mix them in a bowl with crawdad tails, shrimp, sausage, hamburger, or almost any kind of meat. Dump that on top of the croutons.

Now fill the pan up with shredded cheese, usually like 2 or even 3 cups. Then pour blended eggs over the whole thing untill full. This may take many eggs, like 5 or 6.

Bake at 375 for about 35 to 45 minutes. Watch it so it doesn't get too brown on top. It should just be kinda golden brown in the middle, a touch darker around the edge.

I've thrown all my leftovers in this dish. A left over hamburger, diced Kentucky fried chicken, and a pork chop diced, it's all good. All at once. Its like a quiche, only heartier.

Makes killer Hor d'oerves if made in cupcake pan, little individual servings. Adjust cooking times.

Any kind of Italian pasta dish is quick, easy, & cheap.
Tomato sauce & garlic, onions, celery, peppers, mushrooms.
You can add other veggies like carrots, zucchini, & broccoli.
