7 Pounds? That's a heck-of-a-big meatloaf! A 2 pounder usually takes and hour or so, so a 7 pounder (what do you have this in? lol?) I would guess around 2 to 2 1/2 at 350F. An instant read thermometer would come in really handy here.

It shouldn't take much more than an hour....unless you are making a 'empire state building' size. I imagine that you are just making a big and long 'loaf' ?? Just keep it the height of a loaf pan, just longer. I suppose you are free-forming it and putting it on a cookie sheet? If so, 350 for about an hour or hour and 15 mins. Sounds like you are having a crowd! Yum.
